I had reached out to several bakers prior to the expo, but had received nothing but rejection. I had one who seemed like they would be a good fit, but when I sent them the inspiration photos Hubs and I had pulled up online, I guess they couldn't do something of that level of detail in Gluten Free and so they advised they could not make our cake(s).
At the Bridal Expo, vendors kept reaching out and I kindly would tell them "Thank you but we're all set on a venue" or "Thank you but we're all set on a photographer" and the reply was always a friendly "well, what do you have left?" When I replied with "Cake" every single vendor told me "you have to go see Mrs. V!"
So, we made our way around the Expo with Other Wife tasting delicious cake samples. At one booth with four cake samples, this adorable older man came up to us to chat and told us that his wife made the most delicious cakes... and that he wasn't just saying that... it was the truth!
I told the gentleman my tail of woe regarding trying to find a Gluten Free Cake Baker and he promptly told me that his daughter didn't have Celiac but she was Gluten Intolerant and so his wife was very familiar with baking GF Cakes and I had to come talk to her. Lo and behold, his wife was the famous Mrs. V!
Mrs. Vingerber's Sweets is her company name. This sweet lady is right out of Swansboro! She told me that I should call her after Monday and we would set up a date for Gluten Free Cake Tasting at a local coffee shop. She told me that she would make sure that my cake was the only one she baked that day, and she would remove all gluten containing items and then clean and sanitize her kitchen before baking my cake.
I have nothing against other bakeries, but most people consider dealing with my Celiac to be a burden. When you really see a difference is working with folks who either have Celiac or have a family member or friend who requires GF. They're much more caring about the process. Mrs. V is one of those people who understands and she didn't make me feel like I was inconveniencing her because of my medical dietary needs.
Hubs and I will be meeting her on February 11th at our local coffee shop to taste the cake. I am so excited. I've never been able to participate in a cake tasting before. She asked us to bring our inspiration photos and wasn't even daunted at the thought process behind our tree cake for the wedding cake and a fire pit for the groom's cake. Oh and how amazing is it that she said her most delicious GF cake is chocolate and Hubs wants chocolate cake? Coincidence? I think not! I also asked her about doing a cherry filling so we could have chocolate and cherries. She wasn't sure, but when I explained how I do my cherry pie fillings by using cherries, sugar and corn starch to thicken, she got really excited.
My GF cooking knowledge will really help her to ensure she is able to create beautiful cakes that are safe for me. Her process of making all of her cakes and butter creams from scratch ensures that she is able to use safe ingredients. I am already impressed and I look forward to helping her move beyond just Gluten Free, and getting her to Celiac Safe.
